Served on home-made red onion and Rosemary bread with curly endive salad and balsamic dressing

Smoked haddock and pancetta fish cake
With piccalilli yogurt, cucumber tagliatelle and horseradish cream

Chicken liver and smoked goose parfait
With Cumberland sauce, melba toast and pine nut salad

Terrine of forest berries and sparkling wine (v)
Home-made passion fruit water ice and vanilla créme fraiche

Main Courses

Pan-fried medallions of mature local venison
With boulangere potatoes, sweet Ruby port red cabbage, petit ratatouille and redcurrant and stilton jus

Grilled baby halibut fillet
Topped with chorizo, goats cheese and herb crumble and served over moules mariniere with peppered wild roquette and buttered samphire

Char-grilled pesto chicken fillets
Fresh egg fettuccine pasta, confit of peppers, roasted garlic spinach and cream sauce

Deep fried Chinese spiced vegetable spring roll (v)
With cardamom scented braised rice, sweet and sour cherry tomatoes and crispy sea weed

Parsnip, hazelnut and sage Derby roulade (v) (n)
With beetroot chutney, and sauté saffron potatoes

Garlic and Rosemary studded rack of lamb
Carved over grain mustard creamed potatoes with glazed baby vegetables, red onion and pear marmalade, parsnip crisps and Port and lemon sauce

Desserts

Caramelized rum drenched banana pancakes
With vanilla ice cream and toffee sauce

Duet of white and dark chocolate terrine
Served with cherry puree and chantilly cream

Passion fruit and strawberry créme brulee
Served with home-made ginger shortbread

Poached peach melba brandy snap basket
